Preheat oven 180°C fan forced. Grease a 18cm x 28cm (base) slice pan. Line base and sides with baking paper, allowing 3cm overhang on all sides.
Stir peanut butter, butter and honey in a small saucepan over a low heat until smooth. Remove from heat.
Combine oats, flour, peanuts, apricots, apples, currants and sunflower seeds in a large bowl. Add peanut butter mixture and eggs. Stir until combined. Spoon mixture into prepared pan. Press into pan using damp hands.
Bake for 18-20 minutes, or until golden. Cool completely in pan. Dust with icing sugar, cut into bars to serve.
